Please Vote in the Run to Napa Contest

So Zooma Race Series has started a contest (which I have entered) in which they will send the winning blogger ALL EXPENSES PAID on a trip to run the half marathon in Napa this Summer.  But it gets BETTER!  How can it get better than that you ask?  They are throwing in another all expenses paid trip for the blogger to raffle away to one of her blog readers....AMAZING. 

I really want to win this for a number of reasons.  I feel like these great contests I always hear about are really awesome, BUT the races would require me to take days off from school...hard to do.  This one is over my school break....ahhhhh.  Also, my sister lives out there and I would get to see her!  Yeah!  My DC friend will be living out there with her boyfriend at that point.  Double Yeah!  And I would absolutely LOVE to get to know one of my blog readers in such a fun and intimate way!  Racing, Spa-ing, Wine Tasting....oh my.

But, here's the thing.  I am currently in third place.  The leader has quite the lead.  I had though about giving up, throwing in the towel but then I thought no way.  I am always telling myself not to give up when running and telling others to do the same...it would be wrong of me to do that with this!  So I forge on!

At Home Circuit Workout

This workout will give you about 35 mins of active workout time.  I know in many places around the country, it is too cold to work out outside and in some places, even the gyms are closed!  I do this work out in our basement and even our 3 year old gets in on the act!  Put on some pumping music and kids love to dance along and try out the moves!

I tape these up around the room so it is easy to remember what move you are supposed to be doing.  Each station is 90 secs and you will be doing three rounds. 

 In order to know when to switch, download the free app call IntervalTimer. 
You then set it to 1:30 for each interval and it will "ding" above your music playing over the iPhone.


And off you go on a great at home workout the whole family can do.

Recipe: Vegetable Juice Pulp Fritters

  • As I was juicing today, I thought there has got to be something I can do with all this beautiful pulp that was streaming from my juicer.  Delicious solution found!  

  • 1 cup juice pulp (I've found carrots, spinach, and beets work best.  Wheatgrass and Kale was too stringy/chewy)
  • 1 cloves garlic, minced
  • 1/2 tablespoon mustard (grey popon) 
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon chili powder
  • 1/4 teaspoon sea salt
  • 1/8 cup whole wheat breadcrumbs Italian style OR 1/4 cup cooked quinoa and add a dash of herbs
If you aren't vegan, I am thinking you could add an egg to the mix to hold it all together better, but I chose not to. 


Instructions

Combine all the ingredients until evenly combined. It will hold together well when formed into patties.
Place patties on a greased saucepan and cook on both sides over medium heat for 2-3 minutes. The patties will hold together but will be soft and a little crumbly. 
I paired mine with organic ketchup.
