Move Nourish Believe Challenge Week 2


2/10 Go Meatless!  Every day is meatless for me :-).  Buffalo Quinoa with Tofu.  One of my favorites!  

2/11 Take Your Lunch To Work...once again, always do.  I'm a teacher that eats at her desk while planning and responding to parent emails.

2/12 Write it down...What I ate! Breakfast of chia pudding, pumpkin soup for lunch, pistachios for snack and buffalo quinoa dinner.

2/13 Smoothie Day!


2/14 Go Raw!  My favorite raw treat.  Coconut Chocolate Balls!

Product Review: Sunshine Burgers


I recently discovered Sunshine Burgers and they become my new favorite veggie burger.  

I used the Loco Chipotle Black Bean Sunshine Burger to make a sandwich on toasted Ezekial Bread with sprouts, avocado and spicy vegan mayo!  The hubby loved it too.

It's nice to have them in the freezer for a quick and easy dinner.  

You need to try @SunshineBurger, they are so good and minimal ingredients.  I'm so happy I discovered them.

Recipe: No Bake Chocolate Macaroons

My favorite "treat"!  Great to make for Valentine's Day!

I had to share this with you as this is an amazing recipe.  I make a double batch and I freeze the extras so they are always there if I have a craving for something sweet.  The blogger "Oh She Glows" is fantastic...if you aren't following her- you should be!

No Bake Chocolate Macaroons

Vegan, gluten-free, nut-free, grain-free
Email, text, or print this recipe
Yield: 12 macaroons
Ingredients:
  • 1 banana, finely mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1/2 tsp pure vanilla extract
  • 6 tbsp cocoa powder, sifted
  • 1.5 cups unsweetened shredded coconut
  • 1 tbsp chia seeds
  • small pinch of fine grain sea salt, to taste

1. In a medium mixing bowl, mash the banana until most of the clumps are gone. Stir in the melted coconut oil, maple syrup, and vanilla.
2. Sift in the cocoa powder and stir until combined. Now stir in the coconut, chia seeds, and fine grain sea salt to taste.
3. Line a baking sheet with parchment paper or a non-stick mat. Using a spoon or retractable ice cream scooper, scoop rounds onto the sheet. Place sheet in the freezer for around 20 minutes, or until macaroons are firm. Store in the freezer until ready to enjoy. They will soften at room temperature.
Note: 1/4 cup pure maple syrup results in a lightly sweet macaroon. Feel free to adjust the sweetener to your own taste buds, especially because some cocoa powders may be stronger than others.

Product Review: LuluLemon Run Swiftly Long Sleeve

I love this shirt.  Far and away my favorite!  

I would wear my grey one whenever I needed an extra layer.  It was my go-to.

I loved my original grey one so much, after 6 months I went ahead and ordered two more: white and teal!



The fit is superb.  I couldn't ask for a better fit.  I love the thumb holes.  I love the length.  I find the design to be very slimming.  I seriously just wear them ALL THE TIME.  I wish I could afford one in every color!





I was actually on the LuluLemon website this weekend looking at the new colors and noticed my photograph was on the website!  I had hash tagged #runswiftly and it made it!  #honored

 
Do yourself a favor and try one on!  :-)
