Prepared Quinoa or Millet as the base
Black Beans (drained and rinsed)
Corn (I use frozen) or Trader Joe's Corn Salsa with Green Chiles
Sliced Avocado
Douse the whole thing in Sirracha sauce
Top with lots fresh cilantro
This is the corn salsa (just know that it contains added sugar... which I usually limit/avoid)
